Ingredients
- 1 medium Butternut Squash, peeled and cubed
- 1 lb Ground Turkey
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- 1 small Onion, diced
- Fresh Thyme or Sage
- Salt and Pepper, to taste
- 1/4 tsp Nutmeg or Cinnamon
- Optional: Red pepper flakes for heat
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the squash by peeling, seeding, and cubing it into bite-sized pieces.
- In a large mixing bowl, combine the squash with olive oil, salt, pepper, and herbs. Toss well.
- Spread the seasoned squash on a lined baking sheet and roast for 25-30 minutes, flipping halfway through.
- Meanwhile, heat a skillet over medium heat, add olive oil, and sauté diced onions until translucent; then add minced garlic.
- Add the ground turkey to the skillet and cook until browned, seasoning with salt, pepper, and herbs.
- Once both the turkey and squash are cooked, combine them in the skillet and allow to meld over low heat.
- Serve warm, garnished with fresh herbs.
Notes
Consider adding a dollop of Greek yogurt or feta cheese for added flavor. This dish pairs well with a green salad or steamed vegetables.
