Ingredients

  • 1 medium Butternut Squash, peeled and cubed
  • 1 lb Ground Turkey
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 small Onion, diced
  • Fresh Thyme or Sage
  • Salt and Pepper, to taste
  • 1/4 tsp Nutmeg or Cinnamon
  • Optional: Red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by peeling, seeding, and cubing it into bite-sized pieces.
  3. In a large mixing bowl, combine the squash with olive oil, salt, pepper, and herbs. Toss well.
  4. Spread the seasoned squash on a lined baking sheet and roast for 25-30 minutes, flipping halfway through.
  5. Meanwhile, heat a skillet over medium heat, add olive oil, and sauté diced onions until translucent; then add minced garlic.
  6. Add the ground turkey to the skillet and cook until browned, seasoning with salt, pepper, and herbs.
  7. Once both the turkey and squash are cooked, combine them in the skillet and allow to meld over low heat.
  8. Serve warm, garnished with fresh herbs.
