Ingredients

  • 2 cups almond flour
  • 1 cup gluten-free flour blend
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup honey or maple syrup
  • 1/3 cup cold butter or coconut oil
  • 1/2 cup milk (dairy or plant-based)
  • 1 large egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the almond flour, gluten-free flour blend, baking powder, and salt until combined.
  3. In another bowl, whisk together the honey (or maple syrup), melted butter (or coconut oil), milk, and the egg until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick and cut into wedges or use a biscuit cutter for round scones.
  6. Place on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until lightly golden and a toothpick comes out clean.
  7. Let them cool for a few minutes before serving warm.
