Ingredients
- 2 cups almond flour
- 1 cup gluten-free flour blend
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup honey or maple syrup
- 1/3 cup cold butter or coconut oil
- 1/2 cup milk (dairy or plant-based)
- 1 large egg
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the almond flour, gluten-free flour blend, baking powder, and salt until combined.
- In another bowl, whisk together the honey (or maple syrup), melted butter (or coconut oil), milk, and the egg until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick and cut into wedges or use a biscuit cutter for round scones.
- Place on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until lightly golden and a toothpick comes out clean.
- Let them cool for a few minutes before serving warm.
Notes
For extra flavor, fold in chopped chocolate, fresh fruit, or nuts before shaping the scones.
