Ingredients
- 1 head romaine lettuce, chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup fresh basil or parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
Instructions
- Wash and chop the romaine lettuce into bite-sized pieces and place in a large salad bowl.
- Dice the bell peppers and slice the cherry tomatoes and cucumbers. Chop fresh herbs and add them to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, and Dijon mustard until well blended.
- Drizzle the dressing over the salad and toss gently until everything is well coated.
- Serve immediately, or let the salad sit for about 10 minutes for enhanced flavor.
Notes
