Ingredients

  • 2 lbs fresh green beans, trimmed
  • 8 oz fresh button mushrooms, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup fried onions
  • 1 tbsp butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blanch the green beans in boiling water for 2-3 minutes, then drain.
  3. In a skillet, melt butter and sauté mushrooms for 5-7 minutes.
  4. In a mixing bowl, combine cooked mushrooms, cream of mushroom soup, and sour cream.
  5. Fold in the blanched green beans and mix well.
  6. Spread mixture in a greased casserole dish and top with fried onions.
  7. Bake for 25-30 minutes until bubbly and golden brown.

Notes

For added flavor, mix half of the fried onions into the creamy bean mixture before topping.
