A comforting and hearty meatloaf made with ground chicken, garlic, and parmesan cheese, perfect for family dinners.

Ingredients

  • 1 lb ground chicken
  • 4 cloves minced garlic
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • Optional: 1 cup chopped spinach or grated zucchini

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, minced garlic, parmesan cheese, breadcrumbs, eggs, onion, parsley, and thyme. Mix gently until just combined.
  3. Transfer the mixture to a greased loaf pan or shape it on a parchment-lined baking sheet.
  4. Bake for about 45-50 minutes or until the internal temperature reaches 165°F (75°C).
  5. For added flavor, make a glaze with ketchup, brown sugar, and Worcestershire sauce and brush it over the meatloaf halfway through baking.
  6. Allow the meatloaf to rest for 10 minutes before slicing.
