Ingredients
- 1 lb ground chicken
- 4 cloves minced garlic
- 1 cup grated parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp fresh thyme, chopped
- Optional: 1 cup chopped spinach or grated zucchini
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground chicken, minced garlic, parmesan cheese, breadcrumbs, eggs, onion, parsley, and thyme. Mix gently until just combined.
- Transfer the mixture to a greased loaf pan or shape it on a parchment-lined baking sheet.
- Bake for about 45-50 minutes or until the internal temperature reaches 165°F (75°C).
- For added flavor, make a glaze with ketchup, brown sugar, and Worcestershire sauce and brush it over the meatloaf halfway through baking.
- Allow the meatloaf to rest for 10 minutes before slicing.
Notes
Avoid overmixing to keep the texture light and fluffy. Use fresh herbs for better flavor.
