Ingredients

  • 12 Medjool dates, pitted
  • 12 slices thinly sliced bacon
  • 4 oz goat cheese, softened
  • 3 tbsp honey
  • Black pepper or fresh herbs, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make a lengthwise slit on one side of each date and remove the pit.
  3. Fill each date with a generous spoonful of goat cheese.
  4. Wrap each stuffed date with a slice of bacon, securing it with a toothpick if necessary.
  5. Arrange the wrapped dates on a lined baking sheet, spaced apart.
  6. Bake for 15-20 minutes, or until the bacon is crispy and golden.
  7. Drizzle with honey while still warm before serving.

Notes

For a lighter version, you can use turkey bacon. Experiment with different cheeses or add crushed nuts for extra crunch.
