Delicious sliders filled with tender beef and cheese, served with savory au jus for dipping.

Ingredients

  • 2 pounds chuck roast or brisket
  • 4 cups rich beef broth
  • 8 slices provolone or Swiss cheese
  • 12 slider-sized dinner rolls
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tablespoon fresh thyme or rosemary, chopped
  • Dijon mustard for serving
  • Pickles for serving
  • Butter for brushing

Instructions

  1. Season the beef with salt, pepper, and optional spices. In a hot skillet, sear the meat until browned on all sides.
  2. Transfer the seared beef into a slow cooker. Pour in beef broth, add chopped onions, minced garlic, and herbs. Cook on low for 6-8 hours or high for 3-4 hours until tender.
  3. Remove beef from the slow cooker and strain the liquid to create au jus.
  4. Slice the dinner rolls in half. Layer shredded beef on the bottom, top with cheese, and sprinkle with herbs. Replace tops and brush with melted butter.
  5. Arrange sliders on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until cheese is melted and tops are golden.
  6. Serve warm with au jus for dipping.

Notes

For a lighter version, substitute with turkey or roasted veggies. Pair with coleslaw or fries for a perfect meal.
