Ingredients
- 2 pounds chuck roast or brisket
- 4 cups rich beef broth
- 8 slices provolone or Swiss cheese
- 12 slider-sized dinner rolls
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 tablespoon fresh thyme or rosemary, chopped
- Dijon mustard for serving
- Pickles for serving
- Butter for brushing
Instructions
- Season the beef with salt, pepper, and optional spices. In a hot skillet, sear the meat until browned on all sides.
- Transfer the seared beef into a slow cooker. Pour in beef broth, add chopped onions, minced garlic, and herbs. Cook on low for 6-8 hours or high for 3-4 hours until tender.
- Remove beef from the slow cooker and strain the liquid to create au jus.
- Slice the dinner rolls in half. Layer shredded beef on the bottom, top with cheese, and sprinkle with herbs. Replace tops and brush with melted butter.
- Arrange sliders on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until cheese is melted and tops are golden.
- Serve warm with au jus for dipping.
Notes
For a lighter version, substitute with turkey or roasted veggies. Pair with coleslaw or fries for a perfect meal.
