Ingredients

  • 4 medium russet or Yukon gold potatoes
  • 1 lb ground beef (or plant-based substitute)
  • 1 packet taco seasoning
  • 1 cup sautéed onions and bell peppers
  • 1 cup shredded cheese (cheddar or pepper jack)
  • Garnishes: diced avocado, fresh cilantro, diced tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the potatoes and prick each one several times with a fork.
  2. Bake the potatoes for about 45 minutes until tender.
  3. While potatoes bake, heat a skillet over medium heat, cook chosen protein until browned, and stir in taco seasoning and vegetables.
  4. Shred cheese while the filling cooks.
  5. When potatoes are cooked, cut them lengthwise, fluff the insides, and fill them with the meat and veggie mixture.
  6. Top with cheese and return to the oven for 5-10 minutes until cheese is melted.
  7. Garnish with avocado, cilantro, and tomatoes before serving.
