Ingredients
- 4 medium russet or Yukon gold potatoes
- 1 lb ground beef (or plant-based substitute)
- 1 packet taco seasoning
- 1 cup sautéed onions and bell peppers
- 1 cup shredded cheese (cheddar or pepper jack)
- Garnishes: diced avocado, fresh cilantro, diced tomatoes
Instructions
- Preheat your oven to 400°F (200°C). Wash the potatoes and prick each one several times with a fork.
- Bake the potatoes for about 45 minutes until tender.
- While potatoes bake, heat a skillet over medium heat, cook chosen protein until browned, and stir in taco seasoning and vegetables.
- Shred cheese while the filling cooks.
- When potatoes are cooked, cut them lengthwise, fluff the insides, and fill them with the meat and veggie mixture.
- Top with cheese and return to the oven for 5-10 minutes until cheese is melted.
- Garnish with avocado, cilantro, and tomatoes before serving.
