- 2 cups old-fashioned oats
- 1 cup butterscotch chips
- 1 1/2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together butter, brown sugar, and granulated sugar until creamy.
- Add eggs one at a time, mixing until fully incorporated. Stir in vanilla extract.
- In another bowl, combine flour, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in oats and butterscotch chips until evenly distributed.
- Drop tablespoonfuls of dough onto baking sheet, spacing them out as they will spread.
- Bake for 10-12 minutes until edges are golden but centers are soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chilling the dough for 30 minutes enhances flavor and texture. Rotate baking sheets halfway through for even baking.
