Ingredients

  • 2 cups old-fashioned oats
  • 1 cup butterscotch chips
  • 1 1/2 cups all-purpose flour

  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together butter, brown sugar, and granulated sugar until creamy.
  3. Add eggs one at a time, mixing until fully incorporated. Stir in vanilla extract.
  4. In another bowl, combine flour, baking soda, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in oats and butterscotch chips until evenly distributed.
  7. Drop tablespoonfuls of dough onto baking sheet, spacing them out as they will spread.

  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
