Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (or almond/oat milk)
  • 2 eggs
  • 1/2 cup unsalted butter, melted
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  3. In a separate bowl, mix the milk, eggs, and melted butter. Add the vanilla extract.
  4. Gradually add the wet mixture into the dry ingredients, stirring until just combined.
  5. In a small bowl, combine brown sugar and cinnamon. Pour half of the batter into a greased baking dish, sprinkle half of the cinnamon mix, add remaining batter, and swirl in the rest of the cinnamon mix.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool for about 10 minutes before serving.

Notes

For perfect slices, cool the cake completely before cutting. Consider adding cream cheese frosting for a sweeter taste.
