Ingredients

  • 4 cups pulled pork
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup barbecue sauce
  • 1 onion, chopped
  • 3-4 cloves garlic, minced
  • 8 oz. sliced mushrooms
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • Breadcrumbs (optional, for topping)
  • Melted butter (optional, for breadcrumbs)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened, about 5 minutes.
  3. Add sliced mushrooms and cook until golden brown.
  4. Stir in pulled pork and barbecue sauce, heating through.
  5. In a mixing bowl, combine sharp cheddar and Monterey Jack cheese, folding half into the pulled pork mixture.
  6. In a baking dish, layer the pulled pork mixture and top with the remaining cheese. Add breadcrumbs mixed with melted butter if desired.
