Ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • 1 cup pure pumpkin puree
  • ¼ cup Greek yogurt
  • ¼ cup maple syrup (or honey)
  • 1 egg
  • 2 tablespoons melted coconut oil (or unsalted butter)
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together whole wheat flour, baking powder, cinnamon, and ginger.
  3. In a separate bowl, mix pumpkin puree, Greek yogurt, maple syrup, and egg until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms.
  5. Turn the dough out onto a floured surface and roll into a rectangle about ½ inch thick.
  6. Mix melted coconut oil, cinnamon, and brown sugar for the filling, and spread this mixture across the rolled dough.
  7. Roll the dough tightly and slice it into 1-inch pieces.
  8. Place the rolls in a greased baking dish and bake for 20-25 minutes or until golden brown.
  9. Allow to cool for 10 minutes and drizzle with a yogurt-based icing made from Greek yogurt and maple syrup.
