Ingredients
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- 1 cup pure pumpkin puree
- ¼ cup Greek yogurt
- ¼ cup maple syrup (or honey)
- 1 egg
- 2 tablespoons melted coconut oil (or unsalted butter)
- 2 tablespoons brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together whole wheat flour, baking powder, cinnamon, and ginger.
- In a separate bowl, mix pumpkin puree, Greek yogurt, maple syrup, and egg until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms.
- Turn the dough out onto a floured surface and roll into a rectangle about ½ inch thick.
- Mix melted coconut oil, cinnamon, and brown sugar for the filling, and spread this mixture across the rolled dough.
- Roll the dough tightly and slice it into 1-inch pieces.
- Place the rolls in a greased baking dish and bake for 20-25 minutes or until golden brown.
- Allow to cool for 10 minutes and drizzle with a yogurt-based icing made from Greek yogurt and maple syrup.
Notes
For added flavor, consider mixing in chopped nuts or dried fruit into the filling.
