Ingredients
- 1 pound Italian deli meats (salami, pepperoni, ham)
- 8 ounces provolone cheese
- 1 cup diced bell peppers (red, yellow, green)
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- ¼ cup red onion, finely diced
- ½ cup olives (black or green), sliced
- Fresh basil, for garnish
- Salt and pepper to taste
- ¼ cup olive oil (for dressing)
- 2 tablespoons red wine vinegar (for dressing)
- 1 teaspoon Italian herbs (oregano, basil, thyme) (for dressing)
Instructions
- Prepare the ingredients by washing and chopping vegetables. Dice bell peppers, cucumber, and red onion.
- Slice deli meats and cheese into bite-sized pieces.
- In a small bowl, whisk together olive oil, red wine vinegar, and Italian herbs to make the dressing.
- In a large mixing bowl, combine meats, cheese, vegetables, and olives. Pour dressing over and toss until well-coated. Season with salt and pepper.
- Choose your bread (sub rolls, ciabatta, or baguette) and layer the filling generously.
- Wrap in parchment paper and chill for at least 30 minutes.
- Serve garnished with fresh basil and cut into halves or quarters.
