Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup (1 stick) butter
  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, spices, and salt.
  3. In a separate bowl, beat the softened butter with granulated and brown sugar until fluffy.
  4. Add the eggs and vanilla one at a time, mixing well after each addition.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Using a cookie scoop or tablespoon, drop balls of dough onto a lined baking sheet.
  7. Bake for about 10-12 minutes, or until the edges are set and centers look underbaked.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Roll the dough balls in cinnamon and sugar for extra flavor. Adjust cayenne for desired heat level.
