Ingredients
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ teaspoons baking powder
- Pinch of salt
- ½ cup softened butter
- 2 large eggs
- 1 cup milk
- 2 cups heavy cream
- ¼ cup powdered sugar
- Cherries (fresh or jarred)
- Cherry schnapps (Kirsch), or cherry juice
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, and salt.
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs, mixing well.
- Gradually add the dry mixture alternating with milk, mixing until just combined.
- Pour the batter into prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Prepare the cherries by pitting and slicing if fresh, or draining if jarred.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Once the cakes are cooled, slice each layer in half horizontally.
- Layer the cake by placing one layer on a cake stand, drizzling with cherry schnapps, and spreading whipped cream and cherries; repeat until all layers are stacked.
- Cover the entire cake with whipped cream and decorate with chocolate shavings and cherry halves.
Notes
Chill the mixing bowl and beaters before whipping cream. Allow the cake layers to cool completely before assembling.
