Ingredients
- 2 cups all-purpose flour
- 1 cup pumpkin puree
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ½ cup vegetable oil
- 2 large eggs
- ¼ cup cocoa powder
- 1-2 tbsp milk (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, sugars, and spices.
- In another bowl, beat the eggs, then stir in the pumpkin puree and oil.
- Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
- Mix in cocoa powder with about one cup of the batter to create chocolate batter.
- Alternate spoonfuls of the pumpkin and chocolate batters in the muffin tin, and swirl gently.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
Sift dry ingredients for a lighter texture and consider adding nuts or chocolate chips for extra flavor.
