Ingredients

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ cup vegetable oil
  • 2 large eggs
  • ¼ cup cocoa powder
  • 1-2 tbsp milk (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, sugars, and spices.
  3. In another bowl, beat the eggs, then stir in the pumpkin puree and oil.
  4. Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
  5. Mix in cocoa powder with about one cup of the batter to create chocolate batter.
  6. Alternate spoonfuls of the pumpkin and chocolate batters in the muffin tin, and swirl gently.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

Sift dry ingredients for a lighter texture and consider adding nuts or chocolate chips for extra flavor.
