Ingredients
- 1 pound fresh carrots (preferably young and tender)
- 3 tablespoons honey
- 2 tablespoons unsalted butter
- A pinch of salt
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots. Slice them into uniform pieces, about 1 to 2 inches long.
- In a small saucepan over low heat, melt the butter. Stir in honey and a pinch of salt until combined.
- Place the carrots on a lightly greased baking sheet. Drizzle the honey-butter mixture over the carrots and toss to coat.
- Spread the carrots in a single layer and roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and allow to cool slightly before serving. Garnish with fresh herbs if desired.
Notes
Thinner carrot pieces may cook faster. For added flavor, experiment by adding herbs or spices like rosemary or thyme.
