Ingredients
- 1 cup creamy peanut butter (or crunchy)
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 12 miniature peanut butter cups
- 1 cup all-purpose flour (or almond flour for gluten-free)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually mix in the flour, baking soda, and salt until a thick dough forms.
- Unwrap the miniature peanut butter cups.
- Take a tablespoon of dough, flatten in your palm, place a peanut butter cup in the center, and fold the dough around it.
- Place on a cookie sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and avoid overmixing the dough.
