Ingredients

  • 1 cup creamy peanut butter (or crunchy)
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 12 miniature peanut butter cups
  • 1 cup all-purpose flour (or almond flour for gluten-free)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually mix in the flour, baking soda, and salt until a thick dough forms.
  5. Unwrap the miniature peanut butter cups.
  6. Take a tablespoon of dough, flatten in your palm, place a peanut butter cup in the center, and fold the dough around it.
  7. Place on a cookie sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
