  • 2 cups fresh blueberries (or frozen)
  • 1/4 cup sugar (adjust based on sweetness preference)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • Zest of one lemon
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. In a mixing bowl, whisk together the flour, salt, and sugar to make the crust.
  2. Add the cubed butter and mix until it resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, until the dough holds together.
  4. Form the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  5. In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, and cinnamon for the filling.
  6. Preheat your oven to 400°F (200°C).
  7. On a floured surface, roll out the dough into a 12-inch circle.
  8. Transfer the dough to a parchment-lined baking sheet.
  9. Spoon the blueberry filling into the center, leaving a 2-inch border.
  10. Fold the edges of the crust over the blueberries, overlapping as you go.
  11. Brush the crust with an egg wash and sprinkle with coarse sugar.
  12. Bake for 35-40 minutes or until the crust is golden and the filling is bubbling.
  13. Allow to cool for at least 15 minutes before slicing.

Notes

For added flavor, let blueberries rest in the sugar for 30 minutes. Ensure your butter is cold for a flaky crust.
