- 2 cups fresh blueberries (or frozen)

- 1 tablespoon lemon juice
- Zest of one lemon
- 1/2 teaspoon cinnamon (optional)
Instructions
- In a mixing bowl, whisk together the flour, salt, and sugar to make the crust.
- Add the cubed butter and mix until it resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough holds together.
- Form the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
- In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, and cinnamon for the filling.
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the dough into a 12-inch circle.
- Transfer the dough to a parchment-lined baking sheet.
- Spoon the blueberry filling into the center, leaving a 2-inch border.
- Fold the edges of the crust over the blueberries, overlapping as you go.
- Brush the crust with an egg wash and sprinkle with coarse sugar.
- Bake for 35-40 minutes or until the crust is golden and the filling is bubbling.
- Allow to cool for at least 15 minutes before slicing.
Notes
For added flavor, let blueberries rest in the sugar for 30 minutes. Ensure your butter is cold for a flaky crust.
