Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 2 large eggs
  • Honey (for honey butter)
  • Softened butter (for honey butter)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then whisk in the milk and vegetable oil (or melted butter) until well combined.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Grease a mini muffin tin or an 8-inch square baking pan with butter. Pour the batter into the prepared pan, filling each mold about three-quarters full.
  6. Bake mini cornbread bites for 12-15 minutes, or 20-25 minutes for a larger pan, until lightly golden and a toothpick inserted into the center comes out clean.
  7. In a small bowl, mix softened butter and honey until fluffy and smooth for the topping.
  8. Let the bites cool slightly before serving. Top them with a generous dollop of honey butter and enjoy warm!
