Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- Honey (for honey butter)
- Softened butter (for honey butter)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then whisk in the milk and vegetable oil (or melted butter) until well combined.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Grease a mini muffin tin or an 8-inch square baking pan with butter. Pour the batter into the prepared pan, filling each mold about three-quarters full.
- Bake mini cornbread bites for 12-15 minutes, or 20-25 minutes for a larger pan, until lightly golden and a toothpick inserted into the center comes out clean.
- In a small bowl, mix softened butter and honey until fluffy and smooth for the topping.
- Let the bites cool slightly before serving. Top them with a generous dollop of honey butter and enjoy warm!
Notes
For a savory twist, consider adding chopped jalapeños or cheddar cheese to the batter.
