- 1 lb ground beef (or a mix of beef and pork)
- 4 strips of bacon (crispy and crumbled)
- 1 cup shredded sharp cheddar cheese
- 2 fresh jalapeños (diced)
- 1 medium onion (finely diced)
- 1 cup breadcrumbs (or crushed crackers)
- 2 eggs
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/2 cup ketchup (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your ingredients by dicing the onions and jalapeños finely.
- Cook the bacon until crispy and chop it into bite-sized pieces.
- In a large bowl, combine ground beef, sautéed onions, diced jalapeños, crumbled bacon, shredded cheese, breadcrumbs, eggs, garlic powder, salt, and pepper; mix thoroughly.
- Spoon the meat mixture into a loaf pan or shape it into a loaf on a parchment-lined baking tray.
- Drizzle or spread ketchup on top for a glaze.
- Bake for about 60-70 minutes, or until a meat thermometer reads 160°F (71°C) internally.
- Allow the meatloaf to rest for at least 10-15 minutes before slicing.
