Ingredients

  • 1 lb ground beef (or a mix of beef and pork)
  • 4 strips of bacon (crispy and crumbled)
  • 1 cup shredded sharp cheddar cheese
  • 2 fresh jalapeños (diced)
  • 1 medium onion (finely diced)

  2. Prepare your ingredients by dicing the onions and jalapeños finely.
  3. Cook the bacon until crispy and chop it into bite-sized pieces.
  4. In a large bowl, combine ground beef, sautéed onions, diced jalapeños, crumbled bacon, shredded cheese, breadcrumbs, eggs, garlic powder, salt, and pepper; mix thoroughly.
  5. Spoon the meat mixture into a loaf pan or shape it into a loaf on a parchment-lined baking tray.
  6. Drizzle or spread ketchup on top for a glaze.
  7. Bake for about 60-70 minutes, or until a meat thermometer reads 160°F (71°C) internally.
  8. Allow the meatloaf to rest for at least 10-15 minutes before slicing.

Notes
