Deliciously soft and chewy cookies that combine the rich flavors of cheesecake with fresh strawberries.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 cup fresh strawberries, chopped
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the softened butter and cream cheese with both sugars until light and fluffy.
  3. Incorporate the egg and vanilla extract, mixing until fully combined.
  4. Combine the flour, baking powder, baking soda, and salt in another bowl.
  5. Slowly add the dry mixture to the wet mixture, mixing just until incorporated.
  6. Fold in the chopped strawberries gently.
  7. Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Cool on the tray for a few minutes before transferring to a wire rack to cool completely.
  10. Serve and enjoy!
