Ingredients
- 4 Cod fillets
- 1/2 cup Unsalted butter
- 4 cloves Fresh garlic, minced
- 1/4 cup Lemon juice
- 1 tbsp Lemon zest
- 1/4 cup Fresh herbs (Parsley or Thyme)
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare your baking dish by melting the butter in it over low heat.
- Add minced garlic to the melted butter, stirring until fragrant (about 30 seconds).
- Stir in the lemon juice, zest, salt, and pepper.
- Lay your cod fillets in the baking dish, coating them well in the lemon garlic butter.
- Sprinkle fresh herbs generously over the fish.
- Cover with foil and bake for 15-20 minutes; remove foil and bake for an additional 5-10 minutes.
- Garnish with more lemon and herbs before serving.
Notes
For a dairy-free option, substitute butter with olive oil. Cod can be replaced with halibut or haddock if needed.
