A delicious and comforting dish featuring flaky cod fillets baked in a rich lemon garlic butter sauce, perfect for family gatherings or quiet dinners.

Ingredients

  • 4 Cod fillets
  • 1/2 cup Unsalted butter
  • 4 cloves Fresh garlic, minced
  • 1/4 cup Lemon juice
  • 1 tbsp Lemon zest
  • 1/4 cup Fresh herbs (Parsley or Thyme)
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking dish by melting the butter in it over low heat.
  3. Add minced garlic to the melted butter, stirring until fragrant (about 30 seconds).
  4. Stir in the lemon juice, zest, salt, and pepper.
  5. Lay your cod fillets in the baking dish, coating them well in the lemon garlic butter.
  6. Sprinkle fresh herbs generously over the fish.
  7. Cover with foil and bake for 15-20 minutes; remove foil and bake for an additional 5-10 minutes.
  8. Garnish with more lemon and herbs before serving.

Notes

For a dairy-free option, substitute butter with olive oil. Cod can be replaced with halibut or haddock if needed.
