Ingredients

  • 1 lb boneless, skinless chicken (breast or thighs)
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/2 cup peanuts
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 bell pepper, chopped
  • 2 green onions, chopped
  • 1 tsp cornstarch
  • 2 tbsp sugar
  • 1 tsp chili paste

Instructions

  1. Prep your ingredients: Dice your chicken, chop your vegetables, and mince the garlic and ginger.
  2. Marinate the chicken: Combine diced chicken with soy sauce, rice vinegar, and cornstarch. Allow to marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat and add vegetable oil. Sauté garlic and ginger until fragrant.
  4. Cook the chicken: Increase heat, add marinated chicken, and cook until golden and cooked through.
  5. Stir-fry the vegetables in the same skillet until just tender, then return chicken to the pan along with the sauce ingredients.
  6. Add peanuts and stir to coat everything in sauce, cooking for an additional 2 minutes.
  7. Serve hot over rice or noodles, garnished with chopped green onions.

Notes

Make sure to keep the heat high during stir-frying for a wonderful char and avoid overcrowding the pan for even cooking.
