Ingredients
- 1 lb boneless, skinless chicken (breast or thighs)
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 cup peanuts
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 bell pepper, chopped
- 2 green onions, chopped
- 1 tsp cornstarch
- 2 tbsp sugar
- 1 tsp chili paste
Instructions
- Prep your ingredients: Dice your chicken, chop your vegetables, and mince the garlic and ginger.
- Marinate the chicken: Combine diced chicken with soy sauce, rice vinegar, and cornstarch. Allow to marinate for at least 15 minutes.
- Heat a skillet over medium-high heat and add vegetable oil. Sauté garlic and ginger until fragrant.
- Cook the chicken: Increase heat, add marinated chicken, and cook until golden and cooked through.
- Stir-fry the vegetables in the same skillet until just tender, then return chicken to the pan along with the sauce ingredients.
- Add peanuts and stir to coat everything in sauce, cooking for an additional 2 minutes.
- Serve hot over rice or noodles, garnished with chopped green onions.
Notes
Make sure to keep the heat high during stir-frying for a wonderful char and avoid overcrowding the pan for even cooking.
