Ingredients

  • 3 lbs Beef Chuck Roast
  • 1/2 cup Soy Sauce
  • 2 tbsp Sesame Oil
  • 4 cloves Fresh Garlic, minced
  • 1 tbsp Fresh Ginger, grated
  • 1 large Onion, chopped
  • 8 oz Button or Shiitake Mushrooms, sliced
  • 2 Carrots, chopped
  • 2 Potatoes, chopped
  • 4 Scallions, sliced
  • 2 cups Beef Broth

Instructions

  1. Prep the ingredients by trimming excess fat from the beef and cutting it into large chunks.
  2. Sear the beef in a hot skillet until browned on all sides.
  3. Sauté the onions, ginger, and garlic in the same skillet until softened.
  4. Combine all ingredients in a slow cooker, including the beef broth, soy sauce, and sesame oil.
  5. Slow cook on low for 6-8 hours until the beef is fork-tender.
  6. Serve garnished with scallions or sesame seeds.

Notes

For a thicker sauce, reduce the cooking liquid after the roast is finished or use a cornstarch slurry.
