Ingredients
- 3 lbs Beef Chuck Roast
- 1/2 cup Soy Sauce
- 2 tbsp Sesame Oil
- 4 cloves Fresh Garlic, minced
- 1 tbsp Fresh Ginger, grated
- 1 large Onion, chopped
- 8 oz Button or Shiitake Mushrooms, sliced
- 2 Carrots, chopped
- 2 Potatoes, chopped
- 4 Scallions, sliced
- 2 cups Beef Broth
Instructions
- Prep the ingredients by trimming excess fat from the beef and cutting it into large chunks.
- Sear the beef in a hot skillet until browned on all sides.
- Sauté the onions, ginger, and garlic in the same skillet until softened.
- Combine all ingredients in a slow cooker, including the beef broth, soy sauce, and sesame oil.
- Slow cook on low for 6-8 hours until the beef is fork-tender.
- Serve garnished with scallions or sesame seeds.
Notes
For a thicker sauce, reduce the cooking liquid after the roast is finished or use a cornstarch slurry.
