Ingredients

  • 2 lbs Boneless, Skinless Chicken (breast or thighs)
  • 8 oz Cream Cheese
  • 1 cup Freshly Grated Parmesan Cheese
  • 6 cloves Garlic, minced
  • 1 cup Chicken Broth (low-sodium if preferred)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Italian Herbs (oregano or basil)
  • 1 cup Mushrooms (optional, sautéed)

Instructions

  1. Prepare your ingredients: Chop the garlic, slice the mushrooms if using them, and season the chicken with salt and pepper.
  2. Sauté the mushrooms in a skillet with a splash of olive oil until golden and fragrant (optional).
  3. Combine the chicken, sautéed mushrooms, minced garlic, cream cheese, and seasonings in the crockpot. Pour the chicken broth over everything.
  4. Cook on low for 6-7 hours or on high for 3-4 hours.
  5. Stir in the grated parmesan cheese about 15 minutes before serving.
