Ingredients
- 2 lbs Boneless, Skinless Chicken (breast or thighs)
- 8 oz Cream Cheese
- 1 cup Freshly Grated Parmesan Cheese
- 6 cloves Garlic, minced
- 1 cup Chicken Broth (low-sodium if preferred)
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Italian Herbs (oregano or basil)
- 1 cup Mushrooms (optional, sautéed)
Instructions
- Prepare your ingredients: Chop the garlic, slice the mushrooms if using them, and season the chicken with salt and pepper.
- Sauté the mushrooms in a skillet with a splash of olive oil until golden and fragrant (optional).
- Combine the chicken, sautéed mushrooms, minced garlic, cream cheese, and seasonings in the crockpot. Pour the chicken broth over everything.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- Stir in the grated parmesan cheese about 15 minutes before serving.
- Serve over pasta or rice, garnished with extra parmesan and herbs.
Notes
Use fresh ingredients for the best flavor. Adjust the sauce consistency with more chicken broth if too thick.
