Ingredients

  • 4 cod fillets
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley or thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Gather all your ingredients and chop your garlic and herbs finely.
  3. Combine breadcrumbs, parmesan, garlic, salt, pepper, and herbs in a bowl.
  4. Pat the cod fillets dry and season with salt and pepper.
  5. Melt butter and olive oil in a skillet over medium heat.
  6. Dip the cod fillets in the butter, then dredge in the breadcrumb mixture.
  7. Cook the coated fillets in the skillet for 4-5 minutes per side or until golden brown.
  8. Transfer to the oven for an additional 5-7 minutes if necessary.
  9. Serve warm and garnish with additional herbs if desired.

Notes

For a lighter dish, consider using vegetable broth instead of butter. You can substitute cod with tilapia or haddock if needed.
