- 3 cups corn (fresh or canned)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1/2 red onion
- 1 avocado
- 1/4 cup fresh herbs (cilantro or parsley)
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 tablespoons honey
- 1 teaspoon salt
Instructions
- Prep the corn: If using fresh corn, boil for 5-7 minutes, then cool and cut kernels off the cob. For canned corn, drain and rinse.
- Chop the veggies: Dice bell peppers and red onion, and slice avocado just before serving.
- Mix the dressing: Whisk lime juice, olive oil, honey, salt, and any additional spices in a small bowl.
- Combine everything: In a large bowl, mix corn, bell peppers, onion, and herbs. Gently toss with dressing.
- Serve chilled or at room temperature: Let it sit for at least 30 minutes for the flavors to meld.
- Taste and adjust: Taste before serving and modify the seasoning or lemon juice as needed.
