Ingredients

  • 4 Boneless, skinless chicken breasts or thighs
  • 1 cup Heavy cream or cream of chicken soup
  • 8 oz Fresh mushrooms (button or cremini), sliced
  • 4 cloves Fresh garlic, minced
  • 1 Onion, sautéed
  • 1 cup Low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh thyme or parsley, for seasoning
  • Pinch of paprika

Instructions

  1. Sauté the onions and garlic in a skillet until fragrant and slightly golden.
  2. Add the sautéed onions and garlic to the bottom of your slow cooker.
  3. Layer with the chicken, then season with salt, pepper, and herbs.
  4. Mix the heavy cream with the chicken broth in a bowl.
  5. Pour the cream mixture over the chicken, covering it completely.
  6. Add the sliced mushrooms on top.
  7. Set the slow cooker to low and cook for 6-7 hours or high for 3-4 hours.
  8. Serve by shredding the chicken in the sauce and spooning over your favorite side dishes.
