Instructions
- Whisk together the flour, baking powder, sugar, and cinnamon in a large bowl.
- In a separate bowl, whisk together the milk, melted butter, and eggs until smooth, then add the vanilla extract.
- Combine the wet and dry mixtures gently to form a smooth batter, slightly lumpy.
- Preheat a skillet over medium heat and grease lightly with butter.
- Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
- Transfer pancakes to a plate and keep warm while preparing the rest; sprinkle with sugar-cinnamon mix before serving.
Notes
For best results, avoid overmixing the batter to keep the pancakes fluffy.
