Ingredients
- 4 Large Flour Tortillas
- 2 cups Leftover Roast Beef, thinly sliced
- 1 cup Provolone or Mozzarella Cheese, shredded
- 1 Medium Onion, finely chopped
- 2 cloves Garlic, minced
- 2 tablespoons Fresh Thyme or Rosemary, chopped
- 2 cups Beef Broth
- 1 tablespoon Soy Sauce or Worcestershire Sauce (optional)
- Oil or Butter for cooking
Instructions
- Prepare the filling by sautéing chopped onions and minced garlic in a skillet over medium heat for 3-4 minutes until tender.
- Add in the sliced roast beef and cook until warmed through.
- Assemble the roll-ups by laying a tortilla flat, sprinkling cheese on one half, and adding the beef mixture and herbs.
- Roll it tightly while tucking in the edges.
- Cook each roll-up in a greased skillet over medium heat for 2-3 minutes per side until golden and crispy.
- Warm the beef broth in a small pot with optional soy sauce for flavor.
- Serve the roll-ups sliced in half with the warm broth for dipping.
