Ingredients

  • 4 Large Flour Tortillas
  • 2 cups Leftover Roast Beef, thinly sliced
  • 1 cup Provolone or Mozzarella Cheese, shredded
  • 1 Medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh Thyme or Rosemary, chopped
  • 2 cups Beef Broth
  • 1 tablespoon Soy Sauce or Worcestershire Sauce (optional)
  • Oil or Butter for cooking

Instructions

  1. Prepare the filling by sautéing chopped onions and minced garlic in a skillet over medium heat for 3-4 minutes until tender.
  2. Add in the sliced roast beef and cook until warmed through.
  3. Assemble the roll-ups by laying a tortilla flat, sprinkling cheese on one half, and adding the beef mixture and herbs.
  4. Roll it tightly while tucking in the edges.
  5. Cook each roll-up in a greased skillet over medium heat for 2-3 minutes per side until golden and crispy.
  6. Warm the beef broth in a small pot with optional soy sauce for flavor.
  7. Serve the roll-ups sliced in half with the warm broth for dipping.
