- 1 pound beef (sirloin or flank steak), thinly sliced
- 4 cups bok choy, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons vegetable oil (canola or peanut oil)
- 1 cup mixed vegetables (bell peppers, carrots, or snap peas)
- 1 tablespoon sesame oil
Instructions
- Prepare your ingredients: Slice the beef thinly against the grain and chop bok choy into bite-sized pieces, separating stalks from leaves.
- Heat your skillet: In a large wok or heavy skillet, heat 2 tablespoons of vegetable oil over high heat until shimmering.
- Sauté beef: Add the beef in a single layer, searing it for about 2-3 minutes without stirring. Once browned, remove and set aside.
- Cook aromatics: In the same skillet, add a bit more oil if needed, then toss in minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
- Add vegetables: Toss in bok choy stalks and any additional vegetables, sautéing for 2-3 minutes until they begin to soften.
- Combine everything: Return the beef to the skillet, add bok choy leaves, and pour in soy sauce and oyster sauce. Stir-fry together for another minute.
- Finish with sesame oil: Drizzle sesame oil over the top before serving.
- Serve immediately: Enjoy the stir-fry over steamed rice or noodles.
