A delicious and quick Bok Choy Beef Stir-Fry that combines tender beef with crisp bok choy and savory sauces, perfect for busy weeknights.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

  • 1 pound beef (sirloin or flank steak), thinly sliced
  • 4 cups bok choy, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons vegetable oil (canola or peanut oil)
  • 1 cup mixed vegetables (bell peppers, carrots, or snap peas)
  • 1 tablespoon sesame oil

Instructions

  1. Prepare your ingredients: Slice the beef thinly against the grain and chop bok choy into bite-sized pieces, separating stalks from leaves.
  2. Heat your skillet: In a large wok or heavy skillet, heat 2 tablespoons of vegetable oil over high heat until shimmering.
  3. Sauté beef: Add the beef in a single layer, searing it for about 2-3 minutes without stirring. Once browned, remove and set aside.
  4. Cook aromatics: In the same skillet, add a bit more oil if needed, then toss in minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
  5. Add vegetables: Toss in bok choy stalks and any additional vegetables, sautéing for 2-3 minutes until they begin to soften.
  6. Combine everything: Return the beef to the skillet, add bok choy leaves, and pour in soy sauce and oyster sauce. Stir-fry together for another minute.
  7. Finish with sesame oil: Drizzle sesame oil over the top before serving.
  8. Serve immediately: Enjoy the stir-fry over steamed rice or noodles.

Notes

For best results, keep ingredients moving in the pan to achieve a perfect sear. Enjoy with your choice of rice or noodles.
