Delicious and tender meatballs infused with sautéed garlic and fresh spinach, perfect for any family gathering or weeknight dinner.

Ingredients

  • 1 lb ground meat (beef, turkey, or chicken)
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs (panko optional)
  • 1 large egg
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté minced garlic in olive oil for 1 minute, then add chopped spinach until wilted.
  3. Mix ground meat, sautéed spinach and garlic, breadcrumbs, egg, Parmesan, and seasonings in a large bowl.
  4. Form the mixture into golf ball-sized meatballs and place on a lined baking sheet.
  5. Bake for 20-25 minutes until cooked through; broil for an additional 2-3 minutes for a golden finish.
  6. Serve with marinara sauce and herbs, if desired.

Notes

Use a cookie scoop for uniform meatballs and keep hands wet to prevent sticking.
