Ingredients
- 1 lb ground meat (beef, turkey, or chicken)
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1 cup breadcrumbs (panko optional)
- 1 large egg
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté minced garlic in olive oil for 1 minute, then add chopped spinach until wilted.
- Mix ground meat, sautéed spinach and garlic, breadcrumbs, egg, Parmesan, and seasonings in a large bowl.
- Form the mixture into golf ball-sized meatballs and place on a lined baking sheet.
- Bake for 20-25 minutes until cooked through; broil for an additional 2-3 minutes for a golden finish.
- Serve with marinara sauce and herbs, if desired.
Notes
Use a cookie scoop for uniform meatballs and keep hands wet to prevent sticking.
