- 2 ¾ cups All-Purpose Flour

- 2 Eggs
- 1 tsp Vanilla Extract

Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the unsalted butter and sugar until light and fluffy.
- Add the eggs one at a time while mixing, followed by the vanilla extract.
- Whisk together flour and baking powder in a separate bowl, then gradually add to the wet mixture. Your dough should be soft but not sticky.
- Divide the dough into portions and add a few drops of food coloring into each. Mix until uniform.
- Scoop small balls of dough onto the prepared baking sheets, leaving space for spreading.
- Bake for 10-12 minutes, or until the edges are lightly golden. Cool fully on wire racks.
- Pair cookies together by slathering the flat side of one cookie with frosting and topping it with another.
Notes
For best results, let cookies cool completely before assembling to prevent breaking or melting the filling. Chill sticky dough if necessary.
