Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 8 oz egg noodles
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 2 cups chicken broth
  • Fresh parsley, chopped
  • Grated Parmesan cheese

Instructions

  1. Sauté the chicken: Heat half of the butter in a large skillet over medium heat. Season chicken with salt and pepper, then add to skillet. Cook for 5-6 minutes on one side, then flip and cook for another 4-5 minutes. Remove and let rest.
  2. Add remaining butter, then toss in mushrooms and garlic. Sauté for 4-5 minutes until tender.
  3. Cook the noodles by adding to the skillet with chicken broth. Stir and bring to a simmer; cook for 7-10 minutes, stirring occasionally.
  4. Return the chicken to the skillet and let everything cook together for a couple more minutes.
  5. Finish with parsley and Parmesan cheese. Toss gently to combine.
  6. Serve warm, garnished with more herbs or cheese as desired.
