Ingredients
- 1 lb boneless chicken (breast or thighs)
- 8 oz egg noodles
- 4 tbsp butter
- 3 cloves garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 2 cups chicken broth
- Fresh parsley, chopped
- Grated Parmesan cheese
Instructions
- Sauté the chicken: Heat half of the butter in a large skillet over medium heat. Season chicken with salt and pepper, then add to skillet. Cook for 5-6 minutes on one side, then flip and cook for another 4-5 minutes. Remove and let rest.
- Add remaining butter, then toss in mushrooms and garlic. Sauté for 4-5 minutes until tender.
- Cook the noodles by adding to the skillet with chicken broth. Stir and bring to a simmer; cook for 7-10 minutes, stirring occasionally.
- Return the chicken to the skillet and let everything cook together for a couple more minutes.
- Finish with parsley and Parmesan cheese. Toss gently to combine.
- Serve warm, garnished with more herbs or cheese as desired.
