Ingredients

  • 1 lb 80% lean ground beef
  • 1 cup diced onions
  • 1 cup bell peppers (diced)
  • 1 cup zucchini (diced)
  • 2 tbsp taco seasoning
  • 1 15 oz can diced tomatoes
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro, guacamole, jalapeños, and sour cream for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ground beef in a large skillet over medium heat with diced onions for about 8-10 minutes until browned and drain excess fat.
  3. Add taco seasoning and diced vegetables. Cook for another 5 minutes until tender.
  4. Layer half the meat mixture, half the diced tomatoes, and half the cheese in a greased baking dish. Repeat the layers.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
