Ingredients
- 1 lb 80% lean ground beef
- 1 cup diced onions
- 1 cup bell peppers (diced)
- 1 cup zucchini (diced)
- 2 tbsp taco seasoning
- 1 15 oz can diced tomatoes
- 2 cups shredded cheese (cheddar or Monterey Jack)
- Fresh cilantro, guacamole, jalapeños, and sour cream for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the ground beef in a large skillet over medium heat with diced onions for about 8-10 minutes until browned and drain excess fat.
- Add taco seasoning and diced vegetables. Cook for another 5 minutes until tender.
- Layer half the meat mixture, half the diced tomatoes, and half the cheese in a greased baking dish. Repeat the layers.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Let it rest for at least 5 minutes before serving.
- Garnish with fresh herbs, guacamole, and lime juice before serving.
