Ingredients
- 4 Russet potatoes
- 1/2 cup Butter (unsalted)
- 1/2 cup Sour cream
- 1 cup Cheddar cheese (shredded)
- Salt
- Pepper
- 1/4 cup Green onions or chives (chopped)
Instructions
- Preheat your oven to 400°F (200°C). Scrub the potatoes under cold water and poke holes in them with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes or until fork-tender.
- Cool the potatoes for a few minutes, then halve them lengthwise and scoop out the insides into a mixing bowl.
- Mix in the butter, sour cream, half the cheese, salt, pepper, and optional mix-ins until creamy.
- Spoon the mixture back into the potato skins and top with remaining cheese and herbs.
- Bake again for 15-20 minutes until golden and bubbly.
- Garnish with fresh green onions before serving.
Notes
Feel free to get creative with ingredients like sautéed mushrooms or different types of cheese.
