Ingredients

  • 4 Russet potatoes
  • 1/2 cup Butter (unsalted)
  • 1/2 cup Sour cream
  • 1 cup Cheddar cheese (shredded)
  • Salt
  • Pepper
  • 1/4 cup Green onions or chives (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes under cold water and poke holes in them with a fork.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes or until fork-tender.
  3. Cool the potatoes for a few minutes, then halve them lengthwise and scoop out the insides into a mixing bowl.
  4. Mix in the butter, sour cream, half the cheese, salt, pepper, and optional mix-ins until creamy.
  5. Spoon the mixture back into the potato skins and top with remaining cheese and herbs.
  6. Bake again for 15-20 minutes until golden and bubbly.
  7. Garnish with fresh green onions before serving.
