Ingredients
- 1 bone-in, skin-on turkey breast
- 1/2 cup unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage, chopped
- 1 lemon, zested and juiced
- 1 onion, cut into quarters
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (165°C).
- Pat the turkey breast dry with a paper towel and season generously with salt and pepper.
- Blend softened butter with minced garlic, chopped herbs, and lemon zest.
- Loosen the skin over the breast and massage the butter mixture onto the meat.
- Place the quartered onion and garlic cloves inside the cavity of the turkey breast.
- Put the turkey in a roasting pan and add broth to the bottom.
- Cover loosely with foil and roast for about 2 hours, basting every 30 minutes.
- Remove the foil in the last 30 minutes to crisp the skin.
- Check for doneness with a meat thermometer (165°F/74°C).
- Rest the turkey for 15-20 minutes before slicing.
- Use pan drippings to make a rich gravy.
