Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking pan—grease and flour it or line it with parchment paper.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Add nutmeg and salt.
- Cream the sugar and wet ingredients: In another bowl, combine granulated sugar, brown sugar, and pumpkin puree. Beat in the eggs, one at a time, until smooth. Stir in the vegetable oil.
- Combine the mixtures: Gradually mix the dry ingredients into the wet, folding gently until just combined.
- Pour the batter into your prepared baking pan and bake for about 30-35 minutes or until a toothpick comes out clean.
- Cool the cake before cutting into squares to serve.
Notes
For a crunchy topping, mix flour, brown sugar, cinnamon, and cold butter until crumbly and sprinkle on top before baking.
