Ingredients
- 1 ¾ cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- Zest of 1 large orange
- ¾ cup fresh orange juice
- ½ cup olive oil
- 3 large eggs
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Mix together the flour, baking powder, and salt in a mixing bowl and set aside.
- Combine sugar and orange zest in another bowl, then add orange juice, olive oil, and eggs; whisk until combined.
- Incorporate the dry ingredients into the wet mixture, being careful not to over-mix.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack until completely cooled. Dust with powdered sugar before serving.
Notes
For a gluten-free version, you can use almond or coconut flour. Allow the cake to cool completely before slicing for the best texture.
