Ingredients
- 16 oz (450g) Cream Cheese, softened
- 1 cup Granulated Sugar
- 2 Fresh Lemons, juiced and zested
- 1 cup Sour Cream
- 3 large Eggs, at room temperature
- 1 ½ cups Graham Crackers, crushed
- ½ cup Unsalted Butter, melted
Instructions
- Preheat your oven to 325°F (160°C).
- Crush the graham crackers into fine crumbs and mix with melted butter and sugar.
- Press this mixture into the bottom of a springform pan and bake for 10 minutes until set.
- Beat the cream cheese until creamy, then gradually add sugar.
- Mix in the sour cream, lemon juice, and zest until well combined.
- Add the eggs one at a time, mixing until just blended.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 45-50 minutes until the edges are firm and the center jiggles slightly.
- Cool in the pan for about an hour, then refrigerate for at least 4 hours before serving.
- Serve with extra lemon zest, whipped cream, or berries if desired.
Notes
For the best flavor, refrigerate overnight before serving. Use room temperature ingredients for a smoother filling.
