Ingredients

  • 16 oz (450g) Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 2 Fresh Lemons, juiced and zested
  • 1 cup Sour Cream
  • 3 large Eggs, at room temperature
  • 1 ½ cups Graham Crackers, crushed
  • ½ cup Unsalted Butter, melted

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Crush the graham crackers into fine crumbs and mix with melted butter and sugar.
  3. Press this mixture into the bottom of a springform pan and bake for 10 minutes until set.
  4. Beat the cream cheese until creamy, then gradually add sugar.
  5. Mix in the sour cream, lemon juice, and zest until well combined.
  6. Add the eggs one at a time, mixing until just blended.
  7. Pour the filling over the cooled crust and smooth the top.
  8. Bake for 45-50 minutes until the edges are firm and the center jiggles slightly.
  9. Cool in the pan for about an hour, then refrigerate for at least 4 hours before serving.
