Ingredients

  • 12 slider buns
  • 1 pound breakfast sausage (pork or turkey)
  • 1 cup sharp cheddar cheese, shredded
  • 6 large eggs
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • Fresh herbs (chives or parsley) for garnish
  • Butter for brushing
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain excess fat.
  3. Sauté the diced bell peppers and onions in the same skillet until soft, about 5-7 minutes.
  4. Whisk together the eggs with salt and pepper, adding milk if desired.
  5. Scramble the eggs into the skillet with the sausage and veggies until cooked through.
  6. Assemble the sliders by placing the bottom halves of the buns into a baking dish, spooning the sausage-egg mixture on top, and adding a slice of cheese.
  7. Bake the sliders with the top halves for about 15 minutes until heated through and cheese is melted.
