Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 pack (16 oz) gnocchi
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 cups spinach or preferred vegetables
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Sauté the chicken in olive oil over medium heat, seasoning with salt and pepper until browned, about 5-7 minutes. Remove and set aside.
  2. Create the base by adding minced garlic in the same skillet; cook for 1 minute. Toss in chosen vegetables and sauté until tender.
  3. Make the sauce by pouring in heavy cream and bringing to a simmer. Stir in cheese until melted.
  4. Add the gnocchi and cooked chicken back, stirring to coat. Simmer for about 5 minutes until everything is heated through.
  5. Garnish with fresh herbs and serve directly from the skillet.

Notes

For a crispy top, broil for a few minutes at the end. Feel free to customize with your favorite vegetables.
