Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1 pack (16 oz) gnocchi
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 2 cups spinach or preferred vegetables
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Sauté the chicken in olive oil over medium heat, seasoning with salt and pepper until browned, about 5-7 minutes. Remove and set aside.
- Create the base by adding minced garlic in the same skillet; cook for 1 minute. Toss in chosen vegetables and sauté until tender.
- Make the sauce by pouring in heavy cream and bringing to a simmer. Stir in cheese until melted.
- Add the gnocchi and cooked chicken back, stirring to coat. Simmer for about 5 minutes until everything is heated through.
- Garnish with fresh herbs and serve directly from the skillet.
Notes
For a crispy top, broil for a few minutes at the end. Feel free to customize with your favorite vegetables.
