Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 ½ cups cherries (fresh or jarred)
  • 2 cups heavy cream
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, and sugar in a large bowl.
  3. Whisk together the eggs, milk, and vegetable oil in another bowl.
  4. Combine the wet and dry ingredients until just incorporated.
  5. Pour the batter into a greased sheet pan and bake for 30-35 minutes.
  6. Cool the cake in the pan for 10 minutes before transferring to a wire rack.
  7. Slice the cooled cake in half horizontally and layer cherries between the halves.
  8. Top with whipped cream and garnish with more cherries.
  9. Serve chilled or at room temperature.
