Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 cup fresh strawberries, diced
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Whipped cream (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the unsalted butter and sugar together until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until fully incorporated.
  4. Whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, blending just until combined.
  5. Fold in the diced strawberries gently.
  6. Drop mounds of dough onto the prepared baking sheet, spacing them a couple of inches apart.
  7. Bake for 12-15 minutes, or until lightly golden around the edges.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes
