- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 cup fresh strawberries, diced
- 1 large egg
- 1 teaspoon vanilla extract
- Whipped cream (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the unsalted butter and sugar together until light and fluffy.
- Add in the egg and vanilla extract, mixing until fully incorporated.
- Whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, blending just until combined.
- Fold in the diced strawberries gently.
- Drop mounds of dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for 12-15 minutes, or until lightly golden around the edges.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For best results, use room temperature butter and fresh strawberries. Serve with whipped cream or ice cream for a delicious treat.
