- 1 ½ cups all-purpose flour

Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- Combine the dry ingredients in a large mixing bowl: flour, oats, baking powder, baking soda, cinnamon, nutmeg, and ginger.
- Mix the wet ingredients in another bowl: melted butter, brown sugar, and granulated sugar until combined.
- Add in the eggs and vanilla extract, stirring until smooth and creamy.
- Incorporate the grated carrots into the wet mixture.
- Bring the dry ingredients into the wet mixture, mixing until just combined.
- Make the crumble topping by combining flour, butter, brown sugar, and oats until crumbly.
- Scoop the dough onto the prepared baking sheets, spaced about 2 inches apart.
- Top each dough ball generously with crumble topping.
- Bake for 15-18 minutes until edges are golden and centers are set.
- Cool for 5 minutes on the baking sheets before transferring to a wire rack.
Notes
Customize with nuts, raisins, or orange zest for extra flavor.
