Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. Combine the dry ingredients in a large mixing bowl: flour, oats, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  3. Mix the wet ingredients in another bowl: melted butter, brown sugar, and granulated sugar until combined.
  4. Add in the eggs and vanilla extract, stirring until smooth and creamy.
  5. Incorporate the grated carrots into the wet mixture.
  6. Bring the dry ingredients into the wet mixture, mixing until just combined.
