Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1 lb smoked or spicy sausage
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 2 carrots, sliced
- 2 tbsp olive oil
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Salt and pepper to taste
Instructions
- Prep your ingredients. Cut the chicken into bite-sized pieces and slice the sausage, onion, and vegetables.
- Heat the pan. In a large sauté pan, heat olive oil over medium heat.
- Sauté the aromatics. Add the chopped onion and minced garlic. Cook until fragrant.
- Brown the chicken and sausage. Add chicken and sausage to the pan and allow them to brown richly.
- Add the vegetables. Toss in your bell peppers, zucchini, and any other veggies you like.
- Season and finish cooking. Add your herbs, salt, and pepper and stir it all together.
- Check for doneness. Ensure the chicken is cooked through (165°F).

For a lighter option, swap chicken for turkey or use plant-based sausage for a vegetarian version.
