Ingredients

  • 1 pound boneless, skinless chicken breast or thighs, diced
  • 2 cups fresh broccoli florets, chopped
  • 1 cup breadcrumbs (traditional or gluten-free)
  • 2 cloves fresh garlic, minced
  • 1 egg (or flax egg for vegan option)
  • 1/2 cup grated parmesan or cheddar cheese (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prep the ingredients: Finely chop the broccoli and dice the chicken into small pieces.
  2. Sauté the broccoli in a skillet over medium heat with olive oil and minced garlic for about 3-4 minutes.
  3. Mix in a large mixing bowl the sautéed broccoli, chicken, breadcrumbs, egg, cheese (if using), and seasonings.
  4. Shape the mixture into small nuggets, about 1 to 1.5 inches in size.
  5. Coat the nuggets in additional breadcrumbs if desired.
  6. Cook in a hot skillet with oil for about 4-5 minutes on each side until golden brown.
  7. Serve warm with your favorite dipping sauce.

Notes

For added crispiness, try baking at 400°F for 20-25 minutes instead of frying.
