Ingredients
- 1 pound boneless, skinless chicken breast or thighs, diced
- 2 cups fresh broccoli florets, chopped
- 1 cup breadcrumbs (traditional or gluten-free)
- 2 cloves fresh garlic, minced
- 1 egg (or flax egg for vegan option)
- 1/2 cup grated parmesan or cheddar cheese (optional)
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Prep the ingredients: Finely chop the broccoli and dice the chicken into small pieces.
- Sauté the broccoli in a skillet over medium heat with olive oil and minced garlic for about 3-4 minutes.
- Mix in a large mixing bowl the sautéed broccoli, chicken, breadcrumbs, egg, cheese (if using), and seasonings.
- Shape the mixture into small nuggets, about 1 to 1.5 inches in size.
- Coat the nuggets in additional breadcrumbs if desired.
- Cook in a hot skillet with oil for about 4-5 minutes on each side until golden brown.
- Serve warm with your favorite dipping sauce.
Notes
For added crispiness, try baking at 400°F for 20-25 minutes instead of frying.
