Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 3/4 cup Bailey’s Irish Cream
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- Cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each to ensure a smooth batter.
- Gradually mix in the Bailey’s Irish Cream until fully combined.
- Whisk together the flour, baking soda, and salt in another bowl, then gradually incorporate this mixture into the wet ingredients.
- Fold in the chocolate chips gently.
- Drop rounded tablespoons of dough onto the prepared baking sheet.
- Bake for 10-12 minutes until the edges are golden and centers are set.
- While the cookies cool, prepare the Bailey’s chocolate glaze by melting chocolate chips and stirring in Bailey’s.
- Drizzle the glaze over the cooled cookies and let it set before serving.
Notes
Allow the dough to rest in the refrigerator for at least 30 minutes for better shape retention.
