Ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 cup milk
- 1 teaspoon vanilla extract
- 1½ cups fresh strawberries (half diced, half pureed)
- 4 cups powdered sugar (for frosting)
- 1/4 cup strawberry puree (for frosting)
Instructions
- Prepare the strawberries: Start by washing and hulling your strawberries. Dice half for the cake batter and puree the other half for the frosting.
- Preheat your oven: Set your oven to 350°F (175°C).
- Make the cake batter: In a large mixing bowl, cream together the butter and sugar until fluffy. Add in the eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk until well blended.
- Fold in strawberries: Gently fold in the diced strawberries into your batter.
- Bake the cake: Pour the batter into greased cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Make the strawberry frosting: Beat the butter until light and fluffy. Gradually add powdered sugar and combine well, then stir in strawberry puree and a splash of milk.
- Frost the cake: Once cooled, frost between the layers and cover the top and sides with frosting.
- Serve and enjoy: Cut into slices to share with loved ones.
Notes
Use fresh strawberries for the best flavor. Allow cake to cool completely before frosting to prevent melting.
